When food is cooked directly over high heat, it's easy to see that broiling will take place. Meat like steak, as well as other delicacies like scallops, are usually treated to this method and are better because of it. As you can very well imagine, then, this can result in tastes which are different from one another. Maybe you're the kind of person who enjoys a more unique flavor, which is why broiling may stand out, to you, as the better cooking method.
